Meet designer Sarah Healy the New York jewelry designer behind her namesake brand Sarah Healy Design. We had a chance to catch up with Sarah and learn about her more about her vision, style and passion for jewelry. We are delighted to work with such a fashion first brand and socially conscious designer who proudly makes all of her pieces by hand in New York City.

1. Why did you start your own brand?
I have always enjoyed doing things differently and in my own way. Starting my own brand gave me
the opportunity to express my point of view and to have complete creative freedom. After college I
worked in the fashion industry for a few years and I started making jewelry on the side for friends and
family. The response was great, people started to buy jewelry from me and place custom orders.

Sweet Potato & Apple Bake

1 Large cooking apple, peeled, cored & quartered

2 cups sweet potatoes, cooked & mashed

2 eggs, seperated, at room temperature

1/2 teaspoon vanilla extract

2 teaspoons butter or margerine
      apple slices (optional)
      lemon juice (optional)
      vegetable cooking spray

Preheat oven to 350 degrees. Place apple quarters in saucepan, cover with water and bring to boil. Reduce heat and simmer 5 to 8 minutes until tender. Drain. Mash until smooth. Combine apples, sweet potatoes, egg yolks and vanilla, stirring well and set aside.

Beat egg whites until stiff but not dry. Fold into sweet potato mixture. Pour into a prepared 1 quart casserole dish. Dot with butter or margerine. Bake 40 to 45 minutes or until browned. If desired, garnish with apple slices dipped in lemon juice.

Serves 8
